Buffalo Chicken Deviled Eggs

Let's see ... I like buffalo wings, I like deviled eggs: how can Buffalo Deviled Eggs be anything but great.  Uh, they are and more... (Amended from Cooks.com recipe)


Buffalo Chicken Deviled Eggs

  • 1 dozen eggs, boiled, cooled, peeled, and cut in half
  • 2 tablespoons mayonnaise (Increase this if decreasing wing sauce.)
  • 1/2 cup buffalo wing sauce (If you like things less spicy decrease this as desired.)
  • 1 chicken breast, roasted with garlic salt and chopped into small pieces
  • 3 tablespoons finely chopped carrots
  • 1 teaspoon finely chopped green onion
  • 1/3 cup blue cheese (I used feta.)

Remove yolk from each egg, place in a medium bowl. Using a fork break up yokes until there are no large pieces.Add the mayonnaise, wing sauce, chicken, carrots, and onion. Stir until well mixed. Spoon the chicken mixture back into the center well of each egg white. Drizzle with sauce, if desired. Sprinkle with cheese before serving. Garnish with Italian parsley.
