Small and Simple Things

Our Stake Conference yesterday was awesome.  Our theme was Small and Simple Things.  These are the talks that made the most impact on me.

Sacrament meeting - bring a notebook to write down one word or phrase or draw a picture of what they were talking about or an action item.  Can include scripture reference, GC talk, insight or thought.

Scripture reading - 1 minute.  Act it out, read a verse each, find a meaningful word, why is this in there?

FHE - Three things; everyone has to be there, announce that it is FHE and have a treat.  It does not have to have a spiritual nod every time. You need to spend time.

Kindness - Do It.  Zip it if you can't say something nice.  Turn your thoughts to how you could improve someone else's day.  Serve silently (do it without them knowing).

Quiet Missionary Work - Make it about having people know a little more about you.  Example: When a mom at school asks what you did over the weekend include that you spent three hours at church, or that you taught a lesson during Sunday School, or you volunteered in nursery or gave a talk.  You don't need to embellish to start, that will come.  Be who you are by sharing something that is a big part of your life.

I love our Stake President.  He really has some awesome ideas and thoughts on gaining a testimony of your own.  He told the following story (my edited version) that really got my attention as a runner.

"My FIL is a marathon runner.  He has run a marathon at each decade marker and on other occasions to celebrate or mark significant things in his life.  When I was training for my first marathon many years ago I went to him for advice.  "What do I need to do to be successful and finish the race?", I asked.  My FIL looked at me and said, "Nothing new.".  "What?".  "Nothing new.".  I was confused but he went on.  Don't buy new shoes, or socks or shorts or even a new shirt.  Everything you use should be things you have been training in for at least a month  You don't want anything new that may impede your progress.  You need the familiar, the things you have used before that have made training successful.  I took his advice and finished my race under my estimated time.  I was successful because I used what I had used before.  Our journey in the gospel should be similar to this.  As children we are given the basics and we add to our knowledge and understanding but the basics remain;  the Atonement, our Covenants, our Love of the Lord, the Scriptures (there may have been others but I can't remember them).  If  we can keep those small and simple things within sight we will not stray from the Gospel.  These things are not new.  They have been and are the foundation of the gospel of Jesus Christ. These things will always help you progress.  As with a marathon runner, you put one foot in front of the other for 26.2 miles until you cross that finish line.  Then will our Lord and Savior say unto you, "Well done, good and faithful servant.... enter thou into the joy of thy lord." Matthew 25:21

What a week.

Can I be done with this week?  No, I mean really done.  As in move on and not look back.  Done. 


When I have weeks like this I call Deb and go on and on about my woes and typically trade a few and I feel all better or at least like things will be okay.  Deb has the trump right now of bad weeks (months).  Who can top, "My son has kidney disease and needs a transplant and my grandson has a rare leukemia and will need a bone marrow transplant."  SHE WINS EVERY TIME.  Sigh.  Not that I want to win, I just want to whine.  Blah.


So, I have decided to spill here and call it good.


Friday:  Eve lets Bob overhear that Jim is embezzling money from his dad. (Isn't happening.)


Saturday:  Jim goes to inspect our rental to find out that we have a drug Earl-pin (definitely not a king-pin with only 100+/- marijuana plants) living in the property and it is trashed. (Earldoms are much trashier than kingdoms.)


Sunday:  Poorly received lesson.  (I don't know if the lesson was poor or not, I wasn't paying that close attention.  Wallowing/self obsessing will do that.)


Monday:  Shopping with Steve, and Bob tagged along.  It was actually nice but I had to keep a straight face with Eve and it is hard not to punch someone in the kisser that tells lies about your family.


Wednesday:  Dinner with in-laws.  It was just bad.  Eve tried to pull a fast one and sold something that wasn't hers to sell and then tried to hide it.  Jim and Bob tried to put me in the middle but I needed to stay out of it.  Not my circus.  Not my monkey. (I think I want this on my tomb stone.)


Thursday:  A huge tree on the Boulder Creek property fell on our neighbor's house barely missing him and his girlfriend.  It is bad.  Very bad.


Friday:  Dealing with insurance is not fun.  It wasn't horrible but it was tedious.  And by tedious I mean time/soul sucking.


I'm done. 


Deb still wins but in this case I would rather be the loser.  (Sorry Deb!)

Cupcake War

Not really a war but I really couldn't make up my mind which ones to make so I made two base flavors - Lemon & Red Velvet - and three icings with four toppings.  Yes. Yes.  Yes.

My favorite by far was the Red Velvet with Maple Bacon Icing.  I am going to fill it next time with a Maplene filling.

Use most any Lemon & Red Velvet recipe or even a box mix would probably work.



Icings

Maple Bacon

1/2 cup butter, room temperature
2 Tbls Grade B Maple Syrup*
1 cup powdered sugar
4 pieces of maple glazed bacon, cooked and crumbled

Cream butter and maple syrup until smooth.  Add powdered sugar and beat until fluffy.  Frost liberally and top with bacon bits.

*You can use regular Grade A syrup but your icing will be lighter and have less maple flavor.

Fresh Blackberry Buttercream

1 cup butter, room temperature
4 cups powdered sugar
1 cup blackberries
1 tsp vanilla
Blackberries

Puree blackberries and pour into fine mesh colander to sieve out seeds.  Set puree aside.  Cream butter until fluffy.  Add blackberry puree and vanilla and mix until incorporated.  Add powdered sugar 1 cup at a time.  If icing is too thin add powdered sugar several tablespoons at a time.  (Sometimes the berries are extra juicy and thus the need for more powdered sugar)  Top with fresh blackberry garnish.

Chocolate Cream Cheese

8 oz cream cheese, room temperature
4 Tbls butter, room temperature
1 tsp vanilla
1/4 cup cocoa powder
4 cups powdered sugar

Cream cream cheese and butter until smooth.  Add vanilla and mix thoroughly.  Add cocoa and powdered sugar (1 cup at a time) and mix until fluffy.

Oregon Trip

We took a road trip to Oregon last weekend.  Lauren and Connor and I took off on Friday after school. We were just going to Red Bluff a quick 3 hour or less.  It took us 5 1/2 hours.  Ugh.  The Best Western we stayed at was quirky.  Seriously.  The desk clerk gave us directions to our room, and I quote, "Go to the building to the right and down the right side sidewalk past the Koi pond to the doors next to the Aviary.  Up the stairs and down the hall past the Chinese lantern vase."  Yup.
Saturday we were up fairly early and drove up to Shasta Lakes to go to the caves.  We barely made it and even had to run to the pontoon boat for the ride to the bus that took us up 800 feet to the cave entrance.  The tour was nice and interesting if a bit muddy.  We drove up to Roseburg and met Grandpa and Grandma Hanna at Elmer's.  We spent about an hour catching up which was very nice.  The Holiday Inn in Eugene was ever so great after a long drive. We were starving so we walked over to Track Town Pizza.  Connor had a three cheese pepperoni (no sauce), Lauren had the sausage and pepperoni and I had the chicken garlic.  All three were fabulous.  Lauren and Connor took a dangerous swim. Yes.  They went swimming 10 minutes after eating.  Wild kids.

Sunday was great!  We went to church in the ward that I grew up in. We ran into the Elkingtons - Brother Elkington was my band, marching band and jazz band teacher.  It was great catching up with them.  Sister Mitchell was there too.  I met Jollys daughter who I used to babysit a million years ago.  Keira joined us about half way through Sacrament meeting.  After church we drove over to the house I grew up in.  It was smaller than I remember and then the elementary school I attended, Elizabeth Page Elementary.  The tree I planted in 5th grade was still there.  Amazing.

We met Brian and Jody and all at Fred Meyer and had a great time.  We drove up to Mom's grave and sat around for several hours just chatting and catching up.  The kids walked around and were having fun too.  We went to dinner and just continued making up for lost time.  Lauren begged me to stay with Brian and all and we found a cheap flight leaving on the 21st.  It came together so well I couldn't say no.  Lauren was so excited.  Before she left we drove to Hayward Field. She wanted to run on it but it was locked up so we took a few good pictures through the fence. She packed lightening fast and off she went.

Monday went by really fast.  We walked over to the UofO tour at about 9:30.  The walking tour took about 2 hours and was informative and made me want to start all over again.  Connor liked it too.  We then walked through campus to the edge of campus to have lunch.  We had great food, pulled pork sliders for you and seared tuna and fresh pretzels for me, and a great chat.  Then we walked over to Autzen Stadium and walked around a bit.  Surprisingly I found an Oregon Duck soccer ball for Tylor.  We decided to go to the movies, Draft Day (really good), and had a great cheese steak sandwich for dinner.  I ate too much and then had popcorn too.  We even started eating popcorn before the movie started.  Shocking!  (Family joke: Jim is a popcorn Nazi and won't let us start eating popcorn until the movie starts.)

Tuesday I got up and ran up to Hendricks Park.  It was so beautiful, exactly as I remember it.  The rhododendrons were gorgeous.  We went to breakfast at this tiny place, Off the Waffle.  The made leige waffles which are really sweet and a little fabulous.  Really good.  Mmmmmm.  The drive home was boring and long.  We made it home around 6:45 pm and were ever so happy to be there.

I haven't been home in about 20 years and it was really great to go back and visit.  I had forgotten all those great things that made Springfield a great place to grow up.  Thanks Oregon.  I had a great time.

Lamb Sugo with Wide Egg Noodles

This is adapted from a Fine Cooking recipes, Tagliatelle with quick lamb sugo.  I can't leave anything alone.

Sea Salt
2 Tbl extra-virgin olive oil
2 leeks, washed thoroughly then sliced thin
1 small (7-8") zucchini, diced medium fine
1 1/2 lbs ground lamb (NOTE:  I may try this with a shredded leg of lamb next time.)
Fresh ground pepper
1/3 cup tomato paste
1 cup beef stock or purple grape juice
1+ cup tomato juice (I didn't want to have a whole can around so I made my own by mixing water with left
                                  over tomato paste until the right consistency.  Make 2 cups you may need it.)
 1 tsp oregano (It called for fresh but I didn't have any, this was just fine.)
1 package Extra Wide Egg Noodles - keep 2 cups of the water after cooking and drain the rest
Fresh grated Parmesan cheese

NOTE:  Prepare and measure everything you can upfront, this recipe moves pretty fast.

Start the water for the pasta about 10 minutes before you start cooking.

Heat olive oil in 12" skillet over medium high heat.  Add leeks and zucchini with about 1/2 tsp of salt sprinkled over it all.  Cook for about 4 minutes until leeks and zucchini start to brown a bit.  Add lamb and sprinkle generously with salt and fresh pepper.  Stir to break up clumps of meat and cook through until lightly browned about 5-7 minutes.  Move the mixture to the side of the pan and tip it to scoop off most of the fat with a large spoon.  Add the tomato paste in the free side of the pan mashing it into the bottom to brown it a bit, about 1 minute.  Stir it into the meat mixture thoroughly.  Add the beef stock scraping the bottom of the pan to loosen any browned bits. (PUT PASTA IN WATER NOW.) Cook until liquid is half, about 4-6 minutes.  Add the tomato juice and the oregano.  If the mixture seems too thick add more tomato juice.  Reduce heat and cook for 5 minutes.  Taste and then adjust the salt and pepper to taste.

Reserve 2 cups of pasta water and drain the rest.  Put the pasta back in the big pot and add the meat mixture.  Add some of the pasta water if it is too thick or gets too gluey.   Place pasta in a big bowl and grate fresh Parmesan cheese over the top.  Service with a nice salad and crusty bread.

Me:  Huh.  You are going to destroy my memories?
Costco:  Well, I mean we are going to destroy the film and the VHS tape.
Me:  There is a VHS memory?
Costco:  Yes.  Do you remember dropping this off?  It says, "60th Birthday" on the label.  Do you remember that?
Me:  Do I remember my 60th birthday?  No.
Costco:  (With hand over receiver)  Put it in that box.  I don't think this one is going to remember this call in the morning.  (To me.)  Okay.  Well, we have it.  We will keep it for 7 days.  Thank you.  (click)

Me:  Hi.  Amber called me last night about some film to be picked up?
Amber:  Oh, that was me.
Me:  Great.
Amber:  (Looking puzzled.) You look younger than I thought you would.
Me:  Really?  Why is that?
Amber:  Well, you just didn't remember your 60th so I thought you might be older than that.
Me:  Nope not older and I heard you say I wasn't going to remember this in the morning.  You should maybe try muting next time.
Amber:  (Embarrassed.) Oh, yeah, I should.  You do look good for 60 by the way.
Me:  Thanks Amber.


Moral of the story?  When leading people astray try not to lead them down a path they can't get themselves off of.
