Buffalo Chicken Deviled Eggs
Let's see ... I like buffalo wings, I like deviled eggs: how can Buffalo Deviled Eggs be anything but great. Uh, they are and more... (Amended from Cooks.com recipe)
Buffalo Chicken Deviled Eggs
- 1 dozen eggs, boiled, cooled, peeled, and cut in half
- 2 tablespoons mayonnaise (Increase this if decreasing
wing sauce.)
- 1/2 cup buffalo wing sauce (If you like things less
spicy decrease this as desired.)
- 1 chicken breast, roasted with garlic salt and chopped
into small pieces
- 3 tablespoons finely chopped carrots
- 1 teaspoon finely chopped green onion
- 1/3 cup blue cheese (I used feta.)
Remove yolk from each egg, place in
a medium bowl. Using a fork break up yokes until there are no large pieces.Add the mayonnaise, wing sauce, chicken, carrots, and onion.
Stir until well mixed. Spoon the chicken mixture back into the center well of
each egg white. Drizzle with sauce, if desired. Sprinkle with cheese before
serving. Garnish with Italian parsley.

A: Good question. I feel pretty good most of the time so being elated is a tough one - Miss Even-Keel, that's me. I am going to have to go with when Lauren was born. Easy birth, felt great, healthy baby, boys didn't not like her yet... all was right with the world.

Q: How could today have been better?
A: I could have gone to the movies with friends instead of cleaning. I could have visited any sister and not worked. I could have made caramels and eaten them while watching Downton Abbey instead of folding clothes while on hold to correct a banking error. (banks error not mine)
